It is the \u201cking\u201d of the most widely-consumed first courses in Pienza. However, this pasta was discovered by the general public in the mid-1960s, after having been the classic local Sunday dish for centuries and a symbol of poor rural cuisine.\u00a0 Its place in local tradition is demonstrated by traces identified in images painted in Etruscan tombs.<\/p>\n\n\n\n<p><img loading=\"lazy\" decoding=\"async\" width=\"60\" height=\"60\" class=\"wp-image-1635\" style=\"width: 60px;\" src=\"https:\/\/portalepienza.readydigital.it\/wp-content\/uploads\/2025\/11\/indregienti-y.png\" alt=\"\" srcset=\"https:\/\/portalepienza.readydigital.it\/wp-content\/uploads\/2025\/11\/indregienti-y.png 256w, https:\/\/portalepienza.readydigital.it\/wp-content\/uploads\/2025\/11\/indregienti-y-150x150.png 150w\" sizes=\"auto, (max-width: 60px) 100vw, 60px\" \/> <em>Ingredients (for 4 people)<\/em><\/p>\n\n\n\n<p><strong>For the Pici<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Type \u201c0\u201d wheat flour or Semolina<\/li>\n\n\n\n<li>Warm water<\/li>\n\n\n\n<li>Salt to taste<\/li>\n<\/ul>\n\n\n\n<p><strong>For the Aglione Sauce<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Aglione della Valdichiana: 6 large cloves (150 g)<\/li>\n\n\n\n<li>Peeled tomatoes or tomato pur\u00e9e: 700 g<\/li>\n\n\n\n<li>Extra virgin olive oil: 80 ml<\/li>\n\n\n\n<li>Chilli pepper: 1 pinch (optional)<\/li>\n\n\n\n<li>Salt and pepper: to taste<\/li>\n<\/ul>\n\n\n\n<p><img loading=\"lazy\" decoding=\"async\" width=\"60\" height=\"60\" class=\"wp-image-1634\" style=\"width: 60px;\" src=\"https:\/\/portalepienza.readydigital.it\/wp-content\/uploads\/2025\/11\/chef-y.png\" alt=\"\" srcset=\"https:\/\/portalepienza.readydigital.it\/wp-content\/uploads\/2025\/11\/chef-y.png 512w, https:\/\/portalepienza.readydigital.it\/wp-content\/uploads\/2025\/11\/chef-y-300x300.png 300w, https:\/\/portalepienza.readydigital.it\/wp-content\/uploads\/2025\/11\/chef-y-150x150.png 150w, https:\/\/portalepienza.readydigital.it\/wp-content\/uploads\/2025\/11\/chef-y-500x512.png 500w\" sizes=\"auto, (max-width: 60px) 100vw, 60px\" \/><em>Recipe: Simple preparation<\/em><\/p>\n\n\n\n<p><strong>Pici (Fresh Pasta)<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li><strong>Dough:<\/strong> Mix the flour, warm water and salt until you obtain a firm dough. Knead for 10 minutes, then let it rest for 30 minutes.<\/li>\n\n\n\n<li><strong>Shaping:<\/strong> Roll out the dough until it is 1 cm thick, cut into strips, and \u201cappiciare\u201d (roll with the palm of your hand) to form strings.<\/li>\n<\/ol>\n\n\n\n<p><strong>Aglione Sauce<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li><strong>Slow Saut\u00e9:<\/strong> Chop the <em>aglione<\/em>. In a saucepan, cover with extra virgin olive oil and cook over very low heat for 15 minutes. The <em>aglione<\/em> needs to soften, but not fry, in order to maintain its mild flavour. Add chilli pepper.<\/li>\n\n\n\n<li><strong>Cooking:<\/strong> Add the crushed peeled tomatoes and season with salt and pepper. Simmer for about 40 minutes, until the sauce is thick and the garlic has almost dissolved.<\/li>\n<\/ol>\n\n\n\n<p><img loading=\"lazy\" decoding=\"async\" width=\"60\" height=\"60\" class=\"wp-image-1755\" style=\"width: 60px;\" src=\"https:\/\/portalepienza.readydigital.it\/wp-content\/uploads\/2025\/11\/cooking-1.png\" alt=\"\" srcset=\"https:\/\/portalepienza.readydigital.it\/wp-content\/uploads\/2025\/11\/cooking-1.png 256w, https:\/\/portalepienza.readydigital.it\/wp-content\/uploads\/2025\/11\/cooking-1-150x150.png 150w\" sizes=\"auto, (max-width: 60px) 100vw, 60px\" \/> <em>Dishing up<\/em><\/p>\n\n\n\n<p>Cook the <em>pici<\/em> for 3-6 minutes. Drain and toss directly in the sauce. Serve immediately (without grated cheese, to savour the mild flavour of the <em>aglione<\/em>).<\/p>\n\n\n\n<p><img loading=\"lazy\" decoding=\"async\" width=\"60\" height=\"60\" with a medium-bodied red wine that balances the seasoning without overpowering it: a <strong>Rosso di Montepulciano<\/strong> or a <strong>Chianti Colli Senesi<\/strong> are the perfect regional
